Christmas Tree

This is my Christmas tree this year. Its at my moms house this year since I'm slowly migrating myself over there from where i live now . She also has a working fireplace so for the first time in years we will be having a real Christmas. I would be more excited about it but it seems the older I get the more people hate the holidays and become more grumpy then usual lol.

If you posted your tree on your blog link me up I'd love to take a look.
What is your favorite part of the holidays?
Mine is wrapping and buying gifts lol I sometimes volunteer myself to wrap gifts for other people since i enjoy it so much .

The Great Food Blogger Cookie swap with recipe

The Great Food Blogger Cookie Swap

When i found out about this swap i was soo excited to join. We got our 3 partners and have all sent our cookies out to each other so now its time to share my recipe . First though if you want to sign up next year you can go here to sign up for the newsletter .

I decided to go with a cookie that i could decorate since that's one of my favorite parts so i decided to do a gingerbread shortbread cookie. These came out so yummy and made the house smell amazing .

Here is the recipe

Gingerbread Shortbread Cookies:
Preheat over to 375

4 cups of all purpose flour
1/2 cup of white sugar
4 sticks of unsalted butter
2 tbsp of molasses
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ground ginger
1/8 tsp cloves

In a large bowl mix together all your dry ingredients set aside , make sure the butter has softned just a little then in a mixer beat butter sugar and molasses . Add dry mixture cup by cup and beat in the mixture on slow increasing to medium speed toward the end.

These are roll out cookies but do not flour your work space and roll them out the dough should be just dry enough to roll between 2 pieces of parchment or wax paper.
Cut out your desired shapes and bake them on parchment lined baked sheets about 15-17 min depending on your oven they should be a light golden brown color .

Let cool overnight before decorating. I used royal icing to decorate them but you can use butter cream if your more comfortable working with that . You can find loads of royal icing recipes online to use my best advice is to make sure you have meringue powder.
Decorate and let your icing dry overnight and then its time to serve your cookies!
If you have any questions about the recipe feel free to leave a comment and I'll get back to you.

I would like to thank my swap partners for the yummy cookies i received and the people who hosted this swap it was so much fun to take part in .

Pies Pies Pies

Hey everyone so it's been awhile since i have posted anything so first I want to address that. If you have been watching the news last month you saw all the stuff on about hurricane Sandy . Well we lost our power for 11 days and had no cell service for about 5 of those. My uncle who lives here at my moms house also was one of the victims of the storm and it was a hard time trying to plan a funeral arrangements without power or phones. It took awhile for us all to get back into out regular routines and between that and getting out of a 4 year relationship I haven't been in the mood for any blogging.

I really want to start again and will try and post as much as i can this month but It's going to be a super busy time for me lots of baking for parties and gifts and some orders. So on a lighter note lets move onto pies!

The first pie of the fall season i made was this apple pie , i made from the apples we got when we went apple picking . I also made another pie with cookie crumb made from my shortbread cookies but I ended up making the pie during the storm at my moms friends house and never got a picture of it but I will have to share the recipe soon since it came out so yummy!

For Thanksgiving I made a pecan pie because its my favorite of all pies.
I call this the 5lb pecan pie i used about 3 bags of pecans in it. I have a really big pet peeve about most pecan pies and that is they only have a layer of pecans on the top. Meaning your eating a fork full of sugar glaze syrup with a pecan or two thrown in. This pie is full of calories so i recommend making it about once a year but it was amazing. I also topped it with caramel .

Here's a look inside the pie at all the pecans lol

I hope everyone is doing well and having a great start to the holiday season.
Feel free to leave me a comment and let me know what kind of pies you have made or are planning to make for the holiday season?
